Grilled Fish with Lemon Butter Sauce: Recipe

Last week I have attended one day workshop organized by a
well known and famous restaurant of Durgapur i.e Ananya’s. They called only 20
persons to attend it, and I was one of them. In that workshop we were taught
some of their famous recipes by their very own chefs. So today I am sharing one
their famous recipe- Grilled Fish with Lemon Butter Sauce.

Grilled Fish with Lemon Butter Sauce

For Grilled Fish

Vetki (Boneless):             200gm(
2 pcs)
Ginger Paste:                   5gm
(about one table spoon)
Garlic Paste:                    5 gm
(about one table spoon)
Mustard Sauce:                5 gm
(about one table spoon)
Soya Sauce:                     5 ml
(about one table spoon)
Red Chilli paste:              1 gm
(about half tea spoon)
Lemon Juice:                    One
table spoon
Coriander Leaf:                5 gm
Mixed Herbs:                   5 gm
(one table spoon)
Refined Flour:                  According
to need
Sugar:                               1 gm
(half tea spoon)
White Pepper:                  1 gm
(half tea spoon)
Egg:                                  Two
tea spoon
Butter:                               100gm
Salt to taste
Grilled Fish

Take the fish in a bowl; mix all the above ingredient except
the butter together. Add a little water if necessary. Put the fish into the mixture
and gently rub it. Then take a gill pan or tawa and hit it, pour some butter
into it. Take out the fish and put into the grill pan. Then sallow fry the fish
for 10 to 15 minutes. Your Grilled Fish is ready to serve.

For Lemon Butter sauce

Lemon Juice:                      30ml
(Juice of 2 lemons)
Butter:                                 15gm
Garlic Chopped:                  1gm
Green chilli chopped:          1gm
Corn flour:                           5ml
Sugar to taste
Salt to taste

Hit a pan and pour the butter into it. After the butter
melted add chopped garlic and green chilli then sauté for a minute. Then add
lemon juice, sugar and salt. Cook for 5 minutes. Then mix the corn flour with
some water and add it in sauce.  It instantly
thickens the sauce. Stir constantly so that no lamps are going to form. After 2-3
minutes switch off the flame and your Lemon Butter Sauce is ready.

For Butter Rice

Basmati Rice:       200gm
Butter:                   15 gm
Mixed herbs:         1 gm (half tea spoon)
White pepper:       1 gm
(half tea spoon)
Salt to taste

Hit a pan then add the butter. After that add the cooked
basmati rice into it and add all the ingredients into that. Sauté for a minute.
The Butter Rice is ready to serve.

Organize these three items together in a plate and The
Grilled Fish with lemon butter Sauce is ready to eat.
